Mom’s Pancakes

From Mom’s recipe card.

Ingredients:

 

2 eggs

3 tbsp oil

1 tbsp sugar

2 ½ cups milk

2 cups self-rising flour

  (or 2 cups flour, 1 ½ tsp baking soda, 1 tsp salt)

 

Preparation:

Heat a lightly oiled griddle or skillet while you prepare the batter, until a water drop bounces on the surface.

Beat eggs with oil in a bowl or pitcher.

Add sugar and beat in.

Add milk and beat until combined.

Sift flour ingredients into a separate container.

Add flour to liquid gradually, stirring with a wire whisk until the desired consistency.  Don’t beat, and the batter does not have to be completely smooth – use only the minimum stirring to combine.  You may not need all the flour.

Pour onto the griddle and turn when small bubbles cover the top surface.  Only a few seconds on the other side should be enough to brown them.  Never squeeze the pancakes down onto the griddle, let them stay light and fluffy.
